Orange Glazed Baby Turnips

INGREDIENTS

·         1 1/2 pounds baby turnips (with their leaves on if possible)

o    2 tablespoons butter

o    1 teaspoon sugar

o    1/2 cup fresh orange juice

o    1 tablespoon grated orange peel

o    Coarse salt and freshly ground pepper to taste

PpREPARATION

1.     If the turnips come with their leaves, cut them off and set aside. Wash roots and leaves thoroughly.

 

2.     Saute the turnips in the butter with the sugar until they are lightly colored. Add the orange juice and peel, salt and pepper and cover. Cook 5 to 10 minutes or until the turnips are tender when tested with a fork.

3.     Meanwhile, if you have turnip leaves, slice them and sauté them separately afterwards in the same pan with butter until tender. Season with salt and pepper.

 

YIELD       4 servings
