Beet Salad with Greens

I’ve always hated beets until…

I ate this Beet Salad Recipe.

 

Ingredients

  • 1 cup vegetable oil
  • 1 cup toasted hazelnuts
  • ½ tbsp honey
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp coriander
  • 1 bunch of beets
  • Greens/salad
  • Goat or gorgonzola cheese

 

Preparation

            Cut tops and bottoms of beets and boil until soft. Squeeze skins off beets. Slice and lay over a platter of greens. Next crumble a layer of cheese over the beets. All the other ingredients are for the dressing. Combine honey, salt, pepper, coriander and nuts. Pour oil in slowly and wisk until emulsified. Drizzle dressing over salad and enjoy!
